Easy Lemon-scented quinoa and broccoli patties:

Ingredients:

  • 320 g broccoli florets
  • 160 g quinoa
  • 40 g Parmesan grated
  • 2 tablespoons dried breadcrumbs
  • 1 organic egg
  • 1 organic lemon
  •  black pepper
  • fine unrefined salt

Method to make Lemon-scented quinoa and broccoli patties:

    Quinoa and Broccoli Patties
  1. Clean the broccoli florets thoroughly and boil for about 10 minutes in water.
  2. Drain well all the cooking water and leave to cool.
  3. Rinse the quinoa in running water, then boil it for about 10 minutes in 350 g of lightly salted water, drain and leave to cool.
  4. In a large bowl, beat the egg with the Parmesan, salt and pepper.
  5. Add the broccoli florets, quinoa, breadcrumbs and grated lemon zest, and season with salt and pepper to taste.
  6. Mix with the hands and shape into round, even patties.
  7. Roll in the breadcrumbs to coat.
  8. Arrange in an oven dish lined with parchment paper and bake in a preheated oven at 180°C for about 15
  9. minutes, using the ventilator function to crisp the surfaces.
  10. Serve piping hot.
