Easy Lemon-scented quinoa and broccoli patties:
Ingredients:
- Serves 4
- 320 g broccoli florets
- 160 g quinoa
- 40 g Parmesan grated
- 2 tablespoons dried breadcrumbs
- 1 organic egg
- 1 organic lemon
- black pepper
- fine unrefined salt
- Preparation and cooking time:
- 45 minutes
Method to make Lemon-scented quinoa and broccoli patties:
- Clean the broccoli florets thoroughly and boil for about 10 minutes in water.
- Drain well all the cooking water and leave to cool.
- Rinse the quinoa in running water, then boil it for about 10 minutes in 350 g of lightly salted water, drain and leave to cool.
- In a large bowl, beat the egg with the Parmesan, salt and pepper.
- Add the broccoli florets, quinoa, breadcrumbs and grated lemon zest, and season with salt and pepper to taste.
- Mix with the hands and shape into round, even patties.
- Roll in the breadcrumbs to coat.
- Arrange in an oven dish lined with parchment paper and bake in a preheated oven at 180°C for about 15
- minutes, using the ventilator function to crisp the surfaces.
- Serve piping hot.
