Ingredients:

  • 250 ml of quinoa
  • ½ l glasses of water
  • A generous tablespoon of raisins
  • 75 ml olive oil
  • ½ onion
  • 1 medium carrot
  • 1 medium zucchini
  • A teaspoon of sweet pepper
  • ½ teaspoon ground cinnamon
  • ½ lemon
  • 1 sprig of fresh coriander or parsley
  • Salt
  • Pepper

Preparation Quinoa with zucchini and carrot recipe


  1. Heat the water, quinoa and raisins in a saucepan. Season to taste.
  2. When it comes to a boil, lower the heat to medium intensity and cook for about 20 minutes until the quinoa has absorbed all the water and has acquired a smooth and semi-transparent appearance.
  3. Drain it in a strainer and set aside.
  4. Meanwhile, wash, peel and dice the onion, carrot and zucchini.
  5. In a pan with enough oil over medium heat, fry the onion until it is transparent.
  6. Add the carrot, and stir for about 2 or 3 minutes, until the carrot is done.
  7. Add the zucchini and cook for about 4 minutes until everything acquires a smooth texture.
  8. Add paprika and cinnamon and mix well.
  9. Finally, add the quinoa to the pan and mix everything.
  10. Correct with salt and pepper and serve with a splash of lemon juice and chopped fresh coriander, or failing parsley.

To cook quinoa well, it is best to wash it before cooking. If you use the same strainer that will be used to drain it when removing the water, no more utensils will be used than necessary. In this way, the outer part of the quinoa that can give bitterness when cooking is eliminated.
In order for the quinoa to come out really good, it's best to put it in the saucepan when the water is already boiling.
The quinoa should not be cooked more than 15 or 20 minutes, since if we spend it in the cooking time, it will come out pasty. A good clue to know that it is ready is that some white tails appear.

  • Fresh basil
  • 1 pinch of turmeric
  • 1 pinch of salt
  • Olive oil
  • Sesame oil

  1. Wash the quinoa well and put it in a saucepan with boiling water along with the salt and turmeric. Reduce the heat to minimum and cover the saucepan.

  4. In a skillet on the fire, sauté the zucchini with a little oil and salt, for 5 minutes.
