Vegetable Quinoa Salad:
Ingredients:
- For 1 serving
- 8 oz Quinoa Grain
- 1 small summer squash
- 3 oz small diced
- 5 oz can black beans rinsed good
- 1 diced tomato
- 1/2 finely diced green onion and cilantro
- Lemon Juice for 1 lemon
- Times to prepare: 1 hour
Method:
- Cook quinoa (8 oz, of quinoa to 16 oz of liquids) low, sodium vegetable broth or low sodium chicken broth follow package direction
- Add diced summer squash with cooking grain.
- Let, quinoa cool place in refrigerator.
- When cool, fluff grain and add black beans and cucumber and diced tomato and cilantro.
- Add green onion for garnish and squeezed lemon juice.
Asian Quinoa Salad:
Ingredients:
- 1 cup quinoa
- 1 cup cabbage
- 1 cup edamame, shelled and cooked
- 1 red bell pepper
- 1/2 cup carrots,shredded
- 1 cup cucumber
- 1/4 cup soy sauce
- 1tbsp sesame oil
- 1tbsp rice wine vinegar
- 2tbsp green onion
- 1tbsp sesame seeds
- 1/4 cup cilantro
- 1/4 tsp red pepper flakes
- 1/4 tsp ground ginger
- 1/4 tsp black pepper
- time for prepare: 20min
Method:
- Cook quinoa as per package directions.
- Dice vegetables and place in bowl with prepared quinoa.
- Whisk together dressing ingredients and pour over quinoa salad and stir.
